 I want to share a couple of excellent hacks that I've discovered recently for

 entering ketosis. The first one is using ketone esters. These are directly

 converted by the liver into ketones. It doesn't put you in nutritional ketosis

 fog and all that when you get into ketosis.

 The second hack is to use C8 MCT oil powder 

 that seem to also do a very good job of increasing

 ketone levels and giving you a lot of energy.

 I use decaf, but you don't have to. Yeah, very, very effective.

 The hardest thing about doing keto to me at least is when you break keto it's

 that stuff and the keto and esters kind of expensive but they work and the C8

 MCT oil has really helped me get over that without like very little pain.

 Keto lunch with Tom. Man, this guy sure eats a lot. My contribution to Keto.

 Your 40s a decade when you realize you're not gonna 

 forever. The question is what are you gonna do about it?

 All said and told, it was probably about 18 months or so.

 Definitely two harvest seasons. What kicked me out was the fact that keto

 is definitely a lifestyle. It's science. Either you're in ketosis or you're not in ketosis.

 So it's not like cutting a few carbs here and there

 and cutting calories or increasing exercise. If that's the primary impetus,

 like I think it is for kids with epilepsy and stuff,

 and it really can work wonders on those things,

 you just have to commit to it for the rest of existence

 if that's what works. So I didn't really feel that was necessary

 to go to those extremes. I wanted to eat the fruit I grew, for example.

 But it really was an interesting way of looking at diet and nutrition.

 So Don, when you're eating vegetarian keto, what's, like, vegetables 

 I think are some of the toughest places to get proteins and fats from.

 So, wondering what you were eating on vegetarian keto.

 I assume like, maybe mushrooms, tofu, and that's the end of my imagination here.

 So, yeah, curious what you would be eating.

 I would guess lots and lots of avocados, cheese, and eggs.

 It's basically what you already eat on keto but without the meat.

 The vegetarian makes it doable. If it was vegan, I would say impossible.

 Oh, definitely impossible as a vegan, but I raise my own eggs.

 You've got the heavy cream. You've got, I mean, you can still fry things.

 There's a pantheon of green vegetables out there.

 I didn't avoid tomatoes, but you have to watch them

 because there are carbs in tomatoes and carrots and things of that nature.

 I can pretty much find just a million recipes

 for it or just convert things to what I 

 would have wanted outside of that way of eating

 if that makes sense. One thing though I 

 really had to shift was I don't eat fake sugars.

 And by fake sugars we can argue about the natural or the sugar alcohols, so stevia,

 things like that. If it isn't sugar, I call 

 fake sugar. I think they all taste disgusting.

 Yeah, I don't do fake sugar either. I kind of find 

 nasty tasting, but I also don't care for regular sugar

 so it's not a big deal for me to not have sweet.

 For example, I can pick off Stevia or any sugar alcohol a mile away.

 if I were going to try this, I had to try

 it full on without even the notion of a dessert.

 But I also have ways I can get around that. For example, I 

 extract my own vanilla so I could throw some vanilla in coffee.

 I could make like almond flour bread-like substance.

 There's chia hemp seed pudding. So there were ways to kind of get those

 foods, those familiar foods that I might have missed, into the rotation without them ruining ketosis.

 But when all is said and done, it's an interesting place to be as a vegetarian

 keto practitioner because like in my mind, you can do one thing and not be

 strange. You can be a vegan, you can be a vegetarian, you can possibly be paleo

 or keto. You can have one adjective in your diet and people will say, Oh yeah,

 he does keto or he eats this way or she's a vegetarian.

 But once you have two labels, you're weird.

 You have to go out to restaurants with people

 and have water or black coffee or something.

 And it really does become almost an obstruction

 to the people around. I think, at least for me, I could get people to understand

 that I don't eat X, but it was really difficult

 to sit with them and just unload my own dinner plate.

 And it's something I've been used to over the years

 and I've tried so many extreme things for my migraines

 And people are used to me, but it does make things

 very, very difficult to have two or three obstructions in the diet.

 That's okay, we like weird. I have my own way of handling it,

 which is basically if it's offered, I say, oh no, I don't eat that

 or I don't drink that. And I'm usually quite firm about it,

 and people just know not to ask any further.

 and so his more polite way of saying it is like,

 oh, I've got a policy against eating that.

 Feel free not to feed me or something like that.

 It is what it is. I just usually pre-eat and then go to a dinner

 As somebody who's tried so, so many different ways of eating,

 ultimately, I don't know that any one to the extreme

 is terribly beneficial for me. I've tried gluten-free, I've tried natural sugars only,

 I've tried zero sugar, I've tried regimented vegetarian keto.

 Originally, what brought me to that was,

 again, for migraines, looking at it from medical ketosis,

 for epilepsy. Epilepsy, Parkinson's, migraines, these are all kind of cousin ailments,

 and it really does show benefits to children.

 Children in ketosis have fewer seizures in certain areas.

 But ultimately medically it did nothing for 

 me. I did gain a real awareness of different body

 systems and I can now feel sugar and I can 

 know I can feel the things that aren't healthy

 for me when I eat them. I don't feel the need 

 to avoid them all the time but I do clean up my

 eating a lot easier much better and I feel 

 blessed that I don't have the negativity when I try

 different styles of eating. Like there's so much out there available in any style, keto included,

 that I can cook and there's a lot of foods 

 I get to eat. It's not a burden that oh I can't

 have this it's that I get to eat more of 

 wonderful things and I'm a great cook so I can

 make them. So that's always been my mindset. These are not restrictions, they're lifestyles,

 and I don't know the exact reason that they're

 doing their their lifestyle and they seem to come at them from a spirit of restriction.

 that it was a lifetime spirit of restriction

 and I just used that time to to gain more awareness of my body and to

 moderate and clean up the things I did eat and move forward that way.

 But Tom, I am always happy to toss out a billion 

 for anybody who has an ingredient they're challenged by.

 I've got a friend who has this migraine problem as well and he tried literally

 everything all the diets all the different treatments and yeah that's

 that's very very frustrating because I don't think he ever got it to go away

 and I think the thing that helped him the most was a bunch of like meditation

 retreats he got really good at meditation and I as far as I can tell

 that's been like the most helpful to him but yeah I don't think it's I don't

 think he ever solved it so yeah that's that sucks I'm sorry to hear

 That's great to know. What would you do with many Wagyu meals back-to-back?

 I think if I had that much wagyu, I would 

 grill it up on the big green egg, maybe so

 it had just a little bit of a smoky taste, 

 or if you don't have a suitable grill, then

 I'd use definitely cast iron, a little bit 

 of butter, grill it up to a medium rare, maybe

 a, probably a medium rare at least, and 

 I'd put like a sauteed mushroom, onion, with

 a little bit of maybe stilton on the side.

 I wouldn't slather it over the top, I'd 

 put it kind of on the side like a relish or a

 compliment and then for some of the other days, I would make a fresh chimichurri, a

 couple of fresh chimichurris with kind of different aspects or flavors and put that

 as a relish on the side. I think I'd do things like 

 that, I wouldn't want to bury the excellence of that beef.

 It's 9 o'clock on itch app, the regular crowd shuffles in.

 There's Brian sitting next to me, and he's making love to soda and gin.

 I'm not really sure how it goes, but it's 

 starch and it's sweet, and I ate it complete.

 bit, but there's someplace he'd rather be.

 Oh we're all in the mood for a recipe, and God has been so nice.

 Last night my wife and I went to a tasting of the potential new menu items

 for Treat Yourself Keto in Maldebello and yeah it was a lot of food and really

 good and I'll post a couple of my favorites.

 This one is a breakfast burrito that's keto, 

 which I don't know it feels like a breakfast burrito

 shouldn't really qualify to be keto, but

 somehow this one is and it was really good.

 My other favorite was the hot chick sandwich.

 Something about having that pickle in there just made it all perfect.

 I'm curious, Tom, what do you see your long game for keto?

 And what are the benefits for you of deep ketosis versus just nutritional level ketosis?

 For me, I tried much, much deeper and it was 

 really interesting to see how my body morphed

 and changed, kind of just the feeling of things.

 Ultimately, it didn't cure my issue, so I relaxed out of that, but it 

 was really an interesting self-awareness and nutritional self-awareness.

 I'm not really sure. Uh, when I started this, it was for rapid weight loss,

 which when I was younger, that worked very well. Uh,

 this time it didn't really work. Um, now that I'm in deep ketosis,

 uh, I like being here for the energy levels.

 And so I'll probably stay here for a while, uh, just for the energy levels. Um,

 but, uh, yeah, still not seeing weight loss, which is weird. Um, we'll see,

 we'll give it like another week or two and see if it affects weight loss.

 But, um, yeah, I mean, I, it's, uh, you know,

 I basically have gotten them to, um, uh, you know,

 pretty small window intermittent fasting because of this. And, uh,

 do some form of exercise every day in order to stay in it. So, yeah,

 uh, I just like, uh, like where it's going right now.

 So I'll just stick with it for a bit and, uh, and see how it goes.

 I also get my blood tested regularly, so I'll do blood 

 tests and see what's changed and also reevaluate from there.

 When I went into this, I basically assumed that nutritional ketosis would be, while not

 ideal, still sufficient for losing weight, and that deep ketosis would be the ideal.

 So far, that's not really been happening with either, so that's interesting.

 Very different than when I did it five or six years ago.

 I also knew that doing keto properly was hard, but this time it is even harder.
